This recipe for Nutella Yule Log is perfect for Christmas! It reminds me of a recipe that my godmother used to cook for us. It’s a thin vanilla cake that is rolled and filled with Nutella cream and covered in whipped cream, fruits, hazelnuts and honeycomb.
Portions: about 10 slices
Ingredients:
For the cake:
– 5 eggs
– 170g sugar
– 100g flour
– 1/2 tsp vanilla essence
– 20g unsalted butter, melted and cooled to room temperature
– 1/4 tsp salt
For the nutella cream:
– 400g nutella
– 100ml whipping cream
For the whipped cream
– 300ml whipping cream
– 50g icing sugar
– 1/4 tsp vanilla essence
To decorate:
– berries
– Toasted and halved hazelnus
– honeycomb
– icing sugar
Procedure
1. Use an electric or stand mixer to mix the eggs and sugar until ribbon stage is reached. You know you have reached it when you lift some of the mix up and make a drawing and it takes at least 4 seconds before it goes back into the mix.2. Sieve the flour and salt and fold it carefully into the mix. We do this so that we don’t knock out all the air that we just generated. Then repeat this with the butter and vanilla essence. Make sure that the flour is not sitting at the bottom of the bowl; it happens.3. Using a bit of melted butter or oil, brush the tray and use it to stick a piece of baking paper that we cut to size. Make sure it doesn’t have air bubbles. Spread the dough using a spatula.4. This goes in the oven at 180C for 10-15min or until you touch the surface and it springs back. While it’s still hot, run a knife around the cake and take it out, including the paper. Put another piece of paper on top and roll it. Leave it in this position to cool. This will help to keep it from breaking when we roll it afterwards.5. Now let’s make the Nutella cream. First use an electric mixer to smoothen out the Nutella. Then add the cream little bu little and mix it in as well until it’s homogeneous.6. Once the cake has cooled, spread the Nutella cream on top and cut off the dry edges. Take it to the freezer for 15min so it sets.7. In the meantime, we can do our whipped cream. Using an electric mixer, beat the sugar, cream and vanilla until you get a medium consistency. Don’t over do it or it will not look delicate on the log.
8. Cover the log using a palette knife or the back of a spoon, and then decorate with fruits, hazelnuts and honeycomb.
Done! I recommend that you decorate it just before serving so that the fruit is nice and fresh, the honeycomb doesn’t melt and the icing sugar is nice and white. Let’s eat
