Raspberry and sparkling wine cocktail

New Years eve is just around the corner and of course there must be bubbles involved for the toast. That’s why I wanted to give you an option for a twist on a plain sparkling wine glass by adding a raspberry syrup. This raspberry and sparkling wine cocktail has the perfect balance of tangy and sweet.

I love how the glasses look with that brown sugar edge and it’s super easy to do. All you have to do is dip the very edge of the glass in water and then make the brown sugar stick to it. Then when you have a drink it’s super nice that it mixes with the sugar.

I’ve always liked to add a few raspberries to my sparkling wine glass and so this syrup is right up my alley. You can also do the same recipe with blackberries.

Raspberry and Sparkling Wine Cocktail


Course Cocktails
Difficulty Low
Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Servings 7 people

Ingredients

  • 40 g raspberries
  • 80 ml water
  • 80 g sugar
  • 1 lime, squeezed
  • 2 bottles of sparkling wine: brut, demi sec or sec
  • brown sugar to coat the rim

Instructions

  1. Boil the raspberries, water and sugar for 5 minutes.

  2. Pass them through a sieve and chill for at least 4 hours.

  3. Add the lime just before drinking it so it doesn't go bitter.

  4. Turn the glass over a dish with a bit of water so the rim gets wet.

  5. Repeat over brown sugar and let it rest for 5min so it dries a bit.

  6. Fill 1/4 of the glass with the syrup and then fill the rest with sparkling wine. Add a few raspberries so they float around.
