Who doesn’t love it when you go to a cafeteria and you get your coffee with a lovely cookie on the side? I know, right? So instead of reserving this privilege to your coffee outings, why don’t you make them at home for your every hot drink? These are super easy, super cute and of course, super tasty! No wonder they didn’t even last a week at my place. Give them a go 😉
Portions: 40 cookies
Ingredients:
– 400g flour
– 300 g butter
– 100g sugar
– 2 egg
– 4 tsp salt
– 2 tsp vanilla extract
– zest from 2 lemons
– 4 tbsp poppy seeds (or crushed nuts)
– flaked almonds and sugar for sprinkling on top
Procedure:
1. Â Whisk together the butter (soften previously leaving it outside the fridge or in the microwave 10secs at a time), poppy seeds, lemon zest and sugar until no lumps remain.
3. Add the eggs and vanilla extract and whisk until smooth again. Finally fold in the flour and salt until homogeneous. To make sure that the flour and butter is evenly distributed, knead on the table only a couple of times. Any more will make the dough go tough.
4. Roll into a ball and cling film. Let rest in the fridge for 30min.
5. In the meantime I toasted some flaked almonds in the oven until golden. I used it at 200C and they took like 5min, they burn really fast so be careful.
6. Roll the dough using some flour (some!), and make sure to lift it between rolls so it doesn’t stick. Dust with more flour as you need it. I rolled mine to about 3mm thick. Cut with whatever shape you like, I did these wobbly circles (is that eve a shape??? Anyway!). Then you can either put almonds on top and press down slightly, or also sprinkle sugar, they look cuuuute! I put them on some baking paper, you could also use a silicone sheet or silpat mat. Bake them at 180C mine took 15min, you’ll know they are ready when they are lightly golden underneath. Then just let them cool down and MUNCH.
