2nd day of brownie week and I’m already wishing it was brownie MONTH! This might be one of my favourite recipes from the week, I just love blondies. Hazelnut and white chocolate blondies are rocking my world right now and I just need like a thousand more right now please and thank you.
If you don’t like or can’t get hazelnuts you can also use macadamia nuts, they work fabulous, too. And if they both fail any nut you like works, too.
If you want to add some white chocolate chunks on top like me lay them on top on the very las minute in the oven or else they will become golden and caramelized. They will taste great but they don’t look that nice.
Hazelnut and White Chocolate Blondies
Ingredients
- 120 g unsalted butter melted and cooled to room temperature
- 180 g brown sugar
- 1 egg cold, straight form the fridge
- 1 tsp vanilla essence
- 150 g all purpose flour
- 1/2 tsp salt
- 50 g white chocolate
- 40 g hazelnuts cut in half
Instructions

Whisk together the butter, brown sugar and egg until paler in colour. You can also use an electric mixer.

Add the vanilla essence, flour and salt and incorporate using a spatula.

Fold in the white chocolate (chopped if needed) and hazelnuts, leaving a few hazelnuts for the top.

Line a 20x20cm mould with baking paper and pour the mix in. Level it using a spatula and sprinkle the hazelnuts on top. If you want to add white chocolate to the top as well do so when there's only 1 minute left on your timer or else the chocolate will caramelize and go hard.

Take to a preheated oven at 180C for 15min.
