I’ve had 2 people come say at my place ever since I moved to London, and to both of them I prepared pancakes as a welcome breakfast. I thought it was a good idea to share the recipe with you guys since they seemed to enjoy it :). They are fluffy and salty, and I put a layer of icing sugar between them to give it the sweet kick! I also put maple syrup in the table so everyone could have their taste of extra sweetness. The recipe is extremely easy, just basically mixing everything up!
Portions: about 8-10 pancakes
Ingredients:
– 1 cup flour
– 1 cup milk (you can use your favourite, I used lactose free semi-skimmed)
– 2 tbsp butter, melted
– 3/4 tsp baking powder
– 2 eggs
– pinch of salt
– vainilla essence
Procedure:
1. Beat al the ingredients together until smooth
2. Put a little vegetable oil on a pan and in medium-low, add the pancake mix. Once golden (you can flip the side and see how they are doing), turn over and repeat.
3. I don’t put any sugar on the recipe because I’d rather put icing sugar on every pancake, but if you rather have it in the mix, add 4tbsp of granulated sugar to the batter. In my case, when I plate the dish, I drizzle icing sugar onto every pancake layer through a colander.
There you are!! Add your favourite fruits, jams, or anything your heart desires. Serve pretty and enjoy!
