This salad is perfect for a sunny day! I love pesto, so adding it to my salad always makes me feel better than just olive oil. This one is special too as I added walnuts and almonds to give it more texture and flavour. It complements excellent with fresh veggies and makes salad less boring 🙂
Portions: 1 personal salad
Ingredients:
For the salad:
– 1/4 cup corn
– 1/2 cup cherry tomatoes in halves
– 1/3 cup artichoke cores cut in quarters
– Half an avocado (I used Hass)
– 1/3 cup cucumber cut into cubes
– 1 cup lettuce
For the pesto:
– 1/3 cup of walnuts and almonds in equal quantity
– 1/2 cup olive oil
– 1/2 lime
– 10 basil leaves
– 10 baby spinach leaves
– Salt & pepper to taste
Preparation:
1. Toss the salad ingredients together!
2. Put the pesto ingredients in a food processor / mixer and process away until you get a smooth paste
That’s it really! Add your pesto dressing and voila! Serve pretty and enjoy!
