In case you haven’t noticed, I LOVE breakfast. What I love most is to have yoghurt with berries and granola in my breakfast 🙂 So now I bring you my recipe for granola with honey and nuts. The honey makes the granola bunch up and I LOVE that.
The most important thing to get those honey bunches is to press down the granola before baking and at the middle when you move it around once again. Also let it cool like that and when you go take it out you’ll see you will have these clumped up bits stuck with the honey.
Always keep granola in an airtight container at room temperature so it stays nice and crispy. It may stick a bit because of the honey but it quickly comes apart with a fork before serving.
I used 50g of each type of nut but you can use any you want that sums up to 150g. Whatever nuts you have laying around in your pantry works perfectly. You can also add the spices you love: cinnamon, cardamom, vanilla, allspice, go for it. If you prefer you can also use maple syrup instead of honey.
Ingredients
- 50 g almonds
- 50 g walnuts
- 50 g hazelnuts (or 150g of any mix of nuts you like)
- 150 g rolled oats by no means use the pre-cooked or "cooked in 3min" types
- 70 g honey
- 40 g unsalted butter melted
- 1/8 tsp salt
- other options include: dried fruits (hydrate first for 10min in boiling water) and spices

I sliced the walnuts and almonds, and cut in half the hazelnuts. The idea is that they have a nice size so that you can get a piece of everything in a spoonful. Be careful with your fingers when cutting them!

Mix everything in a bowl and put on an oven tray or mould lined with baking paper. Push down the granola so that it sticks together and the honey bunches form.

Take to a preheated oven at 180C for 10 minutes at a time, mixing around in between and pressing down again before it goes back in.

Take out once nice and golden and let cool without bringing it apart until completely at room temperature.
