Roasted sweet potatoes with honey and balsamic

These roasted sweet potatoes are amazingly easy and sooo tasty! It’s a nice alternative to mashed sweet potatoes in the christmas table. They’re sweet and yet the balsamic creates a nice balance. They also have spices so they do have a strong christmas feel to them 🙂 Hope you enjoy them!

Portions: 4 people as a side

Ingredients:
– 4 large sweet potatoes
– 100ml balsamic vinegar
– 50ml soy sauce
– 70g honey
– 1/2 tsp paprika
– 1/2 tsp all spice
– it doesn’t need salt because of the soy sauce 🙂

Procedure:
1. Peel the sweet potatoes and use a melon baller to make balls. First push it down and then twist to get them as round as possible. Save what you have left to make soups. You can always cut the sweet potato in cubes if you like 🙂img_37102. Mix all the other ingredients in a bowl and then put the sweet potatoes in. Put baking paper on an oven tray and they go in at 180C for 30min. Every 10min take them out and give them a mix. If the sauce is still too liquid after 30min, put them back in until it becomes a honey-like texture, also moving hem every 10min.img_3716

Done! So easy, right? It’s quick, easy and super yummy. Bon appetit!
