Apple Dutch Baby or German Pancake

Ingredients

For the batter

  • 3 eggs
  • 90 g all-purpose flour
  • 150 ml milk any kind
  • 2 tbsp granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt

For the cooking

  • 1 small apple, peeled and slice without seeds
  • 20 g unsalted butter

To garnish

  • plenty icing sugar
  • ice cream optional

Instructions

For the batter

  1. Preheat an oven-proof pan or a round pie mould (not unmouldable) along with your oven to 210°C / 410°F. Once the oven reaches the temperature they're both ready to use.

  2. Place all the ingredients in a blender and blend them together.

For the cooking

  1. Remove the pan or mould from the oven and place the butter inside. Use a pastry brush to spread it or rotate it to cover the base and sides.

  2. Pour the batter on the centre.

  3. Spread out the apple slices on the batter and return to the oven for 15-20min. You should see the sides expand up the sides and the dutch baby should be golden.

  4. You can unmould it or serve it directly in the pan or mould with plenty icing sugar and ice cream (the ice cream is optional).
