Banana muffins with Chocolate Chunks

I’m a muffin fan. I think it’s because I love individual desserts and these are like personal cakes, lol. These banana muffins with chocolate chunks are super soft, with a delicious crumb and dark chocolate chunks. They are perfect for breakfast, brunch, tea time or as a dessert or snack.

These muffins are based on my banana bread recipe that many of you make. That banana bread has no chocolate but rather walnuts but still you can swap them if you prefer or add both. The other obsession I’ve seen you guys with is my chocolate marbled banana bread with chocolate chunks. I get the obsession because it’s a spectacular recipe.

One of the things I like about these muffins is its crumb. A banana bread will always be a bit denser than a regular one but this one is nice and airy. It feels nice and soft in your mouth and the flavour is amazing. The only thing you need to be careful with texture-wise is that you need to let the banana and butter mix cool down COMPLETELY before adding the rest of the ingredients. If you don’t let it cool down it’s going to become dense. The other thing I like about this recipe is that you don’t need overly ripe bananas to make it because it softens up in the pan with the butter as it cooks.

Banana Muffins with Chocolate Chunks

Ingredients

  • 300 g peeled bananas 2-3 bananas, not necessarily over-mature
  • 75 g unsalted butter
  • 150 g sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 190 g all purpose flour
  • 50 ml milk
  • 2 tbsp honey
  • 50 g chocolate, chopped. I used 60% cacao

Instructions

  1. Melt the butter on low heat with the cinnamon. Once melted add the chopped bananas and cook until they start to become mushy. Use a spatula to help the bananas turn to purée.
  2. Remove from heat and let it cool down completely.
  3. Add the milk, the egg, honey, vanilla essence and mix. Then add the dry ingredients as well as the chocolate chunks and mix again.

  4. Place paper lines in your moulds and add the mix.

  5. Bake the muffins at 170C for 15-20min or until you can insert a thin knife at the center and it comes out clean.
